PESSAC-LÉOGNAN · LEFT BANK

In 1986 a new communal district was created within Graves, based on the districts of Pessac and Léognan, the first of which lies within the suburbs of the city. Essentially this came about through pressure from Pessac-Léognan vignerons who wished to disassociate themselves from growers with predominately sandy soils further south in Graves. Pessac-Léognan has the best soils of the region, very similar to those of the Médoc, although the depth of gravel is more variable, and contains all the classed growths of the region. Some of its great names, including Ch. Haut-Brion, even sit serenely and resolutely in Bordeaux's southern urban sprawl. The climate is milder than to the north of the city and the harvest can occur up to two weeks earlier. This gives the best wines a heady, rich and almost savoury character, laced with notes of tobacco, spice and leather. Further south, the soil is sandier with more clay, and the wines are lighter, fruity and suitable for earlier drinking.

Medium yellow. Strongly woody, behind it a lot of ripe fruit, spices. Powerful start, has body, opulent fruit, some pressure on the middle palate, good acidity, the wood is also present here. In the finish again with lots of ripe fruit. More power than finesse but very good quality.
Milanese-style medallion of veal with ricotta ravioli in a tomato and fresh oregano cream: the tender meat and fresh cheese flavour will provide the perfect match for the aromatic power of this Château Brown White.

The wine has a ruby colour with density and beautiful purple glints. The first nose, superb, immerses uncompromisingly in essences of fruits and flowers oscillating between blueberry and violet. There is also a nice bouquet of spices of white pepper and cloves. After swirling, smokier notes and fresher notes of red cedar finally exhale. The mouth is very elegant, its attack is round and suave. The balance and accuracy of this wine are impressive. When the wine takes on its full expression, we enjoy the fruity and floral notes perceived on the nose, full of brilliance and delicacy. Its length on the palate, fine and tasty, already shows its ability to age long and well.

2015 puts smiles on our faces, it is the dream vintage in terms of quality and weather, white and red batches, in barrels today, confirm the promise we had already predicted during the harvest. However, the heat of July prevented the growth of certain berries, and the yields are lower than expected. The tastings of the blends we have just finished suggests a beautiful vintage worthy of the best years.

2018 was a year of extremes. The excessive rainfall of winter and spring was followed by drought with a long sunny summer for more than four consecutive months ... rare and ideal! The resulting wines are full of color, dense, structured, and expressive. Opulence and exceptional quality for a solar vintage. Packed with steeped plum, blackberry and cassis flavors, this also sports licorice root, applewood and tar notes. Dense and shows a chewy edge, but it's seriously long, energetic and vibrant, so just cellar to let it unfurl.

The 2020 vintage is characterized by its power and its fresh and dense fruit. Fine and precise tannins announce a great aging capability. HEV3 certification. Colour is pale yellow with silver highlights. The nose is intense, complex, revealing delicate notes of white fruit (pear, peach) and citrus (pomelo, lime). The attack is ample. It is a fine and elegant wine, with a lot of volume in the middle of the mouth: a nice fatness, a nice freshness, a well-integrated woodiness. The notesof ripe white fruit (pear, peach) and citrus peel blend harmoniously together, enhanced by a hint of vanilla. Long and complex finish.
This wine is the perfect accompaniment to a meal from the starter to the cheese platter. It is equally delicious served with asparagus in gribiche sauce, turbot with morel mushrooms or hard cheeses such as Cantal, Beaufort, etc.
Goes perfectly with starters, sweetbreads, shellfish, fish, white meats, and cheese. The long aftertaste goes beautifully with lobster as well as sheep's cheese from the Pyrenees. Will also go well with salads, lobster thermidor or crab stuffed sea urchins.

The 2016 Latour-Martillac is pale yellow color with sparkling highlights and has complex aromas of both floral (verbena, honeysuckle) and some exotic fruits (passion fruit) and lemon. The palate is beautifully fresh and is balanced by a delicious creaminess. In the mouth, there is elegance with the same complex, fruity aromas of white peach and ripe apricots as well as the floral note of verbena and fresh mint. This wine is remarkably long length on the finish. This is good for drinking over the next 8-10 years and is a blend of 60% Sauvignon Blanc, 40% Semillon.

The wines had all the characteristics of a great vintage. 2018 was a very hot year, but this had relatively little effect on the aromatic profile of the white wines. They have superb balance, tremendous freshness, and a distinguished, elegant character. The reds are beautifully crafted. The Merlot offers a sublime mid-palate, with a silkiness and density that are rarely achieved. The Cabernet is spectacular, with exceptional aromatic profiles and levels of quality. The Petit-Verdot’s, co-fermented with the merlots, are particularly silky.

The color of the wine is dark red, almost black with blueish hues. Very expressive on the nose with red fruits and black fruits flavors. A good swirl in the glass releases a large range of flavors and spices. Star anis, liquorice as well as empyreumatic notes and flint stones from the günzien gravels. It goes very wide and powerful on the palate at first, then the well-defined structure and smoothness of the wine gives it all its balance, fresh and full body.

Chateau Smith Haut Lafitte 2015 is a very dark red wine, almost black. The nose expresses a bouquet of black fruits and very fresh red fruits. Through swirling, the nose appears more complex with notes of spices, cedar, liquorice associated with notes of violet and a touch of flint stone. The mouth is straightforward, dynamic, powerful, dense, classy. Tannins are concentrated, unctuous and silky. They give the wine great length and beautiful texture. We find again in mouth the crunchy and ripe fruits and an additional spicier dimension with liquorice, citron, clove and a wonderful finale of floral and mineral notes.

Intense, fresh, and refined nose, of red and black fruits. The aromas of black cherry, blackberry and blueberry dominate in an atmosphere of both peppery and sweet spices at the same time. Dense, delicate, delicious and energetic palate. Magnificent finesse concentration. Tight and elegant weft. Sweet flavors of ripe fruit are intense, salivating and accompanied by a gustatory complexity very typical of this vintage. Humus, graphite, and licorice. Great overall freshness. Pale gold color with some vivid glimmers. Intense and exotic floral nose of yellow peach, mangoes, and citrus fruits. Dense, generous, greedy but lively palate, without heaviness. Refines, ripe, and very delicate flesh. Long, elegant finish with great finesse. The acidity is present, without weakness, relative to the level of concentration of this wine. Excellent balance, high class wine.
Domaine de Chevalier Blanc is a perfect wine to serve with all types of seafood, fish, shellfish, crab, lobster, chicken, veal, port and of course cheese.

Olivier Bernard, owner of Domaine de Chevalier in the Pessac-Léognan appellation area, signs this rosé made from bleeding of the tank used for the grand vin. This means that after a few hours of macerating the black varietals, the wine is “bled” from the tank to make this rosé, and by such concentrating the juice left for the red wine. The resulting wine is of good stature, featuring accents of raspberry and citrus zest. Fresh pink currant tint, slightly orange. Bright bouquet of tangy and citrus fruits: wild strawberry, cherry, banana, mango, tangerine zest. Luscious, delicious, fresh palate, true to its aromas. Very nice smoothness and good length. A delight.
Definitely a table rosé perfectly suited for grilled veal chops.

Malolactic fermentation in barrels. Fresh pink currant tint, slightly orange. Lively nose of tangy fruit and citrus, wild strawberry, exotic fruits and clementine. Delicious and generous mouth, fresh and very fruity.
Try it with Mushroom Pate; Niçoise Salad, paella or grilled chicken, or fish. Also enjoyable with rustic pâtés and terrines, charcuterie, ham and sheep's cheese.
