PAUILLAC · LEFT BANK


Pauillac is the aristocrat of the Médoc boasting 75% of the Médoc's first growths and with grand cru classés representing 84% of Pauillac's production For a small town, surrounded by so many familiar and regal names, Pauillac imparts a slightly seedy impression. There are no grand hotels or restaurants, with the honourable exception of the establishments owned by Jean-Michel Cazes, there is a small port and yacht harbour and a dominant petrochemical plant. But outside the town, there is arguably the greatest concentration of fabulous vineyards throughout all Bordeaux, including three of the five First Growths. Bordering St Estèphe to the north and St Julien to the south, Pauillac has fine, deep gravel soils with important iron and marl deposits, and a subtle, softly rolling landscape, cut by a series of small streams running to the Gironde. The vineyards are located on two gravel-rich plateaux, one to the northwest of the town of Pauillac and the other to the southest, with the vines reaching a greater depth than found anywhere else in the Médoc. Pauillac's first growths each have their own unique characteristics; Lafite Rothschild, tucked in the northern part of Pauillac on the St Estèphe border, produces Pauillac's most aromatically complex and subtly-flavoured wine. Mouton Rothschild's vineyards lie on a on a well-drained gravel ridge and with its high percentage of Cabernet Sauvignon can produce (in its best years) Pauillac's most decadently rich, fleshy and exotic wine. Latour, arguably Bordeaux's most consistent first growth, is located in southern Pauillac next to St Julien. Its soil is gravel rich with superb drainage and Latour's vines penetrate as far as 5 metres into the soil. It produces arguably the most long-lived wines of the Médoc.

The wine has a rich colour with a garnet hue. The nose opens on blackberry notes mingled with refined hints of roasted coffee beans. With airing, noble, and delicate notes of graphite, flint, and cocoa round off this very attractive array of aromas. A fresh and full-bodied attack leaves an impression of generosity and superb balance, leading into a mid-palate on cherry-stone and dark chocolate flavours underpinned by chiselled tannins. The slightly chalky finish is mineral and very long.

At Lafite, we hesitated for a long time over the best moment to start picking. We took the plunge on September 19th with our finest Merlots. Then came a rainy spell of a few days that was beneficial, lowering the degrees and bringing our Cabernets Sauvignons to perfect ripeness. The first tastings, after running the wines off skins, left us amazed: the wines are pure, with a very precise ripe style. A modern Lafite classic is already in the making. At blending, some nice surprises from our vines from "outsider" plots, which this year have produced pure and elegant wines that were just ahead of some of the regulars in the blend for the Grand Vin. This is particularly the case for Merlot, with some plots of this variety planted on clayey gravel that surpassed our usual great Merlots thanks to their liveliness.

Very dark colour, with purple glints, indicating that the wine is still very much in its youth. The nose is still quite closed, which is to be expected after only a few months in the bottle. But it already presents good depth and plenty of complexity. Notes of fresh strawberries and tobacco, in which the wood has become perfectly integrated. The attack is simultaneously supple and very powerful. The intensity on the palate rises steadily… gently coming to rest on a plateau that is already very high. Not at all aggressive, it continues with great length, and in perfect harmony. This is a Lafite that is currently revealing very little of its potential; to experience it in its full glory will require waiting… for some years.

The dense ruby/purple-colored 2011 Mouton Rothschild (90% Cabernet Sauvignon, 7% Merlot and 3% Cabernet Franc) displays tell-tale notes of creme de cassis, vanillin and spicy oak, more tannin than many of the Pauillacs, and a solid, medium-bodied, concentrated, muscular Cabernet Sauvignon personality. Still tightly knit and closed, but with lots of potential, it is a big, firmly structured Mouton that may turn out to be slightly austere. It is great to see Pichon-Lalande back on superb form in 2006 with a wine whose purity and linear cassis fruit is reminiscent of their cracking 1996. General Manager Gildas d'Ollone and his team have produced a cerebral yet beguiling Pichon-Lalande full of sensual, exotic aromatics and pure supple flavours. This is a massive Pichon softened by a silky texture and velvety finish. New owners Louis Roederer must be delighted with their first vintage here, and rightly so. Drink: 2015-2030.

Biodynamic. Vibrant and deep in color. The nose is a fusion of red and black berries, graphite and spices. The palate's structure is particularly dense and long with chiseled tannins of incredible precision.
Chateau Pontet Canet is best served at 15.5 degrees Celsius, 60 degrees Fahrenheit. The cool, almost cellar temperature gives the wine more freshness and lift. Chateau Pontet Canet is best paired with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, roasted, braised, and grilled dishes.

57% Cabernet Sauvignon, 36% Merlot, 7% Cabernet Franc.
Beautiful deep colour that sparkles in the glass. The nose is of course still very young, with primary notes of early ageing. Superb notes of spices and fresh raspberries. On the palate, the attack is supple and rounded. The wine then presents young, lively tannins, whose excellent quality will be revealed with time. The finish is complex and harmonious with beautiful burnt notes. This Carruades needs five to seven years to open up and has all the characteristics of a wine that will continue to improve for many more.
Best paired with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, roasted, braised, and grilled dishes. Chateau Lafite Rothschild is also good when matched with Asian dishes, rich fish courses like tuna, salmon, mushrooms, and pasta.

Les Forts de Latour 2015 needs a little air to release a deep and powerful nose of cordial cassis, boysenberries, plum and black. chocolate, with suggestions of Chinese five spices, clove oil, violets, and crushed stones. The palate has absolute flavor, bursting with rich, ripe black fruit and plenty of spicy sparkle, while being framed by beautifully sumptuous tannins, finishing long and mineral. Not at all heavy, on the contrary, Les Forts de Latour 2015 is both expansive and very refreshing. In terms of evolution, it has hardly budged since I last tasted it in 2017. If it drinks very well at the moment, it has easily 20 good years of aging, maybe more. Impressive.
