PAGO AYLES

The Pago wine concept It is a concept similar to the French “Grand Cru”, the Italian “vigneti” or the German “gesetzlich geschützte Einzellage”, intended to indicate the quality potential of the Pago (both the vineyard and the “terroir”).



Since October 2010 we have been recognized as a PAGO WINE (“Vino de Pago”), as defined by the Spanish Vineyard and Wine Law (“Ley 24/2003”), becoming the first winery in Aragón to have this title and one of the 10 wineries that in Spain possesses this exclusive Designation of Origin granted only to the wineries with the highest level of quality excellence. In the Spanish wine quality pyramid, the Pago stands as the top tier with respect to other Designations of Origin. As such, they must comply with strict requirements relating to the process of production, processing and bottling such as: For the production of a Pago wine, only grapes coming from the Pago may be used. •Production, storage and aging of these wines should be made separately from other wines.
•A comprehensive quality system must be applied from the production stage, until the marketing of the wines.

2018 "A" OF AYLES

34% Tempranillo, 33% Merlot, 18% Garnacha, 15% Cabernet Sauvignon.
Attractive deep cherry red in colour. The wine displays pronounced intensity on the nose, well defined, with an extraordinary complex and wide range of aromas (fresh red fruits, ink, spices and final floral character). In the mouth the wine is clearly defined by its elegance and fruit intensity. Harmonious and well balanced, medium to full bodied, with more structure and fruitiness than past vintages.
Serve with Chicken dishes, or Mexican food such as tacos, nachos, burritos, and chile rellenos. Best served between 13ºC - 15ºC (55ºF – 59ºF).

2017 "Y" OF AYLES

35% Garnacha, 26% Tempranillo, 23% Merlot, 16% Cabernet Sauvignon.
Dark ruby red in colour. It has a perfumed nose defined, with an extraordinary complex and wide range of aromas (spicy aromas of freshly cracked black pepper, red berries and boysenberries, warm oak, and just a hint of dark cocoa and mineral notes). In the mouth, the wine has an excellent creamy feel, texture and refined tannins. Persistent, elegant and well balanced, full bodied leading to a rich mouth-filling finish supported by a crisp acidity.
A wine with a long life ahead of it, which we recommend as an accompaniment to the finest food in order to fully appreciate the range of intense but subtle flavors. A concentrated yet elegant wine that represents the new direction of Pago Aylés.

2014 "E" OF AYLES

100% Tempranillo.
Dark reddish purple with cherry red towards the edge of the glass. Cherry, black-berry, smoke and rosemary on the nose, a bit of anise and minerally earth. It hovers in between medium and full bodied. Soft and elegant tannins, with crisp acidity that keep the mouth fresh. Good length on the finish. Best served between 14ºC - 16ºC .
Great with lasagna, pizza and dishes with tomato-based sauces; or BBQ meats.

2016 "3" OF AYLES (TRES DE 3000)

35% Garnacha, 35% Merlot, 30% Cabernet Sauvignon.
Smooth, full bodied wine with ripe black berry fruit flavours and spicy aromas (black pepper, asian spices, cinnamon) and mineral notes like graphite.
Ideal to accompany a variety of hearty red meat dishes and cheese. Best served at 14-16 degrees celcius.

2018 "L" OF AYLES - ROSADO

50% Garnacha, 50% Cabernet Sauvignon.
The only rosé Pago wine in Spain and with a black bottle in a limited edition. A different rosé made up of Garnacha and Cabernet Sauvignon. Night harvested. Cold prefermentative maceration Temperature controlled fermentation. Without malolactic fermentation to preserve acidity and freshness. It displays an attractive and intense strawberry pink color and has aromas of great intensity that are reminiscent of red fruit preserves (strawberry and blackberries) with notes of cream and fresh herbs. On the palate it is balanced, savory and lively, with crisp acidity that cleans the mouth.
Serve with Cheese, Semi hard cheese, Dinner with friends, Barbecues, Red meat, roast, fried or grilled.

2013 "S" OF AYLES

100% Garnacha.
Purple and cherry red light colour. The nose reveals lavender, red-berries, licorice, kirsch and bouquet garni. Medium bodied. The mouth is marked by freshness, a fine structure and a long silky finish. A subtle garnacha wine with purity and minerality. Best served between 14ºC -16ºC.
Serve with BBQ Ribs, Grilled Sausages, or Lamb Chops.
