HAUT-MÉDOC · LEFT BANK

Includes Moulis-en-Médoc, Médoc, and Listrac-Médoc wines.
Despite being as visually unprepossessing as the rest of the Médoc (despite its grandiose châteaux) this large red-wine appellation of Haut-Médoc is home to some of the world’s greatest wines. Its 4,500ha of vineyards form a largely continuous strip that follows the Gironde from St Seurin-de-Cadourne, just north of St Estèphe, to Blanquefort in the northern suburbs of Bordeaux. All the great communes of the Left Bank fall within its boundaries: Margaux, St Julien, Pauillac and St Estèphe, as well as the up and coming Moulis and Listrac. These are labeled under their own more illustrious and expensive appellation names. Châteaux labeled simply as Haut-Médoc rarely reach such heights but nevertheless offer consistently good quality and offer some of the best value in Bordeaux. Haut-Médoc wines tend to be firm and fine with generous fruit and a nice minerality; what many would consider ‘classic Claret’. They come from loftier vineyards and offer higher quality and more complexity than those labeled simply as Médoc. Almost all wines are a blend of the principal varieties - Cabernet Sauvignon, Merlot and Cabernet Franc - which helps producers hedge their bets if the slightly capricious climate causes one variety to fail. Small amounts of Petit Verdot, Malbec and even Carmenère are also used.

The superb maturity of Cantemerle’s Cabernet Sauvignon is evident up front by its degree of concentration and complexity—the sign of a great Médoc wine. Before tasting this fine bottle, you’ll want to transfer it to a decanter an hour before serving. After this preparatory step you’ll discover the wine’s fuller aromatic richness: the bouquet expresses cherry, olive, and tobacco notes, as well as hints of oak that are still somewhat present. In the mouth, silky tannins launch a symphony of spicy, peppery, and fruity flavors upon the palate that are of great quality and generously supported by a long, full softness. The finish is lengthy and lively, neither limp nor harsh. A well-constructed balance is the foundation which supports a structure of freshness, elegance, persistence, and a perfectly controlled power.
The wine of Chateau Cantemerle is best served with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, roasted, braised, and grilled dishes. Chateau Cantemerle is a perfect match with Asian dishes, hearty fish courses like tuna, mushrooms, and pasta as well as cheese.

All the usual aromas of this wine—tobacco, black currant, cloves and a woodiness typical of ripe Cabernet—are present in a subtle register which will become more prominent with time. The tannins are very supple, lingering elegantly on the finish. At this stage of its development the wine is characterized by a delicate charm. This promising wine offers a typical illustration of the Cantemerle terroir. Very classic, it calls for some time in a decanter before serving.

Chasse-Spleen 2003 has developed an incredible complexity while retaining great freshness! Perfect for parties! An evolved wine but kept perfectly in the chateau's cellars, solid and linear, which stands out as one of the jewels of the Moulis-en- Médoc appellation in this vintage! 60% Cabernet Sauvignon, 40% Merlot.
Intense dark purple opaque colour. Some balsamic notes with prune, cassis, and ripe fruit blends with some oak and mild spices. The palate is still youthful with a slight austerity and tannic bite, high acidity, primary fruit flavours, some oak and smoke notes followed by a medium to long finish. An ambitious effort needing time to settle.
Chateau de Braude perfectly accompanies the most re?ned dishes and brings sparks to the simplest meals. Its modest vintages still impress by their delicacy and its best by their incomparable grace.

Richly coloured, the aromatics feature cherry and raspberry fruits, with a little perfume, and an impressive clarity for the appellation. It is no less convincing on the palate, showing a nicely defined and slightly sinewy substance, with a touch of floral potpourri to the dark and curranty fruit here. Ripe tannins, modest acidity and a little length mean this is a Médoc which should enjoy wide appeal.
Chateau Potensac is best served at 15.5 degrees Celsius, 60 degrees Fahrenheit. The cool, almost cellar temperature gives the wine more freshness and lift.
